NORTH AMERICAN FRESH WATER FISH
The fish are caught daily by the local fisherman and processed within hours of the catch. The fast processing helps to maintain the highest quality of the fish. All fish are eviscerated (entrails removed), washed and packaged commonly in 50 lb (22.68kg) or 75 (34kg) lb boxes. The fish are suitable for baking and smoking in addition to other specialty uses. We also manufacture whitefish fillets (6-8 oz (170-225gr), 8-10 oz (225-280gr), 10-12 oz (280-335gr) and 12-14 oz (335-395gr). All fillets are individually vacuum-packed for easy use and longer shelf life. The vacuum-packed whitefish fillets are used by many restaurants as the dinner entrée. We also manufacture block frozen, scales on whitefish fillets for smoking.
